Steamed artichokes with Herb-caper Mayonnaise

Pan Seared Scallops with Smoked Tomato Butter and Warm Spinach Salad

With the scallops, I plan to omit the bacon and swap pea shoots for the watercress sprigs. Should be yummy! No starch… as the hubby is doing a “detox diet”… a**hole! (Only b/c I don’t have the will power to stick to it… Dammit!)

Oh, and I may swap the butter with White Truffle butter… depending on how it tastes with the smoked tomato. We’ll see…

I just LOVE truffles! Mmmm…..

UPDATE: Just finished eating. Made the artichokes, but didn’t eat them. I think the hubbie is going to have at least one tonight.

The scallops came out delicious! However, that said… I did some serious improvising. I did add the pea shoots and omit the bacon from the salad. I also dressed the salad with truffle oil, white balsamic vinegar and Parmesan cheese.

I didn’t realize you needed an actual “smoker” to make the smoked tomatoes (would help if I actually read the recipes)… so I oven roasted the tomato, pureed it with white truffle butter and honey and then de-glazed the scallop pan with the concoction.

I topped the salad with the seared scallops and then drizzled (glopped) the tomato mixture on top. DELISH!
