Raw Nut Pâté


As part of my 3-day detox, I tried to include as many raw foods as possible. This pate was my dinner on Day 1 and was quite good!

To prepare for the recipe, soak 7 oz. of raw, whole almonds (I used marcona, which technically weren’t raw — but all I had) and cashews in cold water for about an hour:

Raw Nut Pâté

Serves 2

2 tbsp torn fresh basil
1 tbsp chopped cilantro
7 oz. whole almonds and/or cashews, soaked
2.5 oz. raw pine nuts (you can find these at Trader Joe’s)
2 tbsp lemon juice
1 garlic clove

Place all ingredients in food processor and blend until smooth. You can add a little water to adjust the consistency (I did). Place in a small bowl and refrigerate. Serve with mixed spouts, veggies or crackers.
