Simple, fresh and incredibly tasty…
Delicious Detox Salad
Serves 2
4 oz Mache (lamb’s lettuce)
1 c pea shoots
1 c edamame
1 c shredded purple cabbage
1/2 c alfalfa sprouts
2 celery stalks, sliced
Sesame oil
2 lemon wedges
Fresh ground salt and pepperOnto each plate, place 1/2 of the mache and 1/2 of the pea shoots. Top with 1/2 of the sprouts and 1/2 of the purple cabbage. Sprinkle with 1/2 the edamame, 1/2 the celery, about 1 tsp of sesame oil (or a little more to taste), the juice from 1 lemon wedge and salt and pepper to taste.
This salad is very light, but full of flavor — due to the sesame oil. The edamame adds a fair amount of protein and the celery and cabbage help to “flush out” your system. The remaining ingredients add bulk and fiber… further aiding the “elimination” process. 🙂
